collage + crumble

A collage of the weekend, and a yummy fall recipe (image, top right).

Apple, Squash, and Cranberry Crumble:

3 medium golden delicious apples, peeled, cored, cut into 1/4″ thick slices

1-1/2 c. diced butternut squash

1/2 c. fresh cranberries

7 T brown sugar

1 T fresh lemon juice

10 t flour

Zest of 1 lemon

1/2 t ground cinnamon

Pinch of salt

6 t cold butter, cut into pieces

Preheat oven to 375.  In large bowl, toss apples, squash, cranberries, 3 T brown sugar, lemon juice/zest, 2 t flour, 1/4 t cinnamon, salt.  Mix and transfer to 8″ square baking dish.

In small bowl, combine remaining 4 T brown sugar, 8 t flour, and 1/4 t cinnamon. Using a pastry blender or a fork, cut in butter until mixture becomes crumbly.  Spread mixture evenly over fruit.

Bake 40-45 min. or until fruit bubbles at the edges and top is brown.  Place on rack and cool 10 minutes. Spoon crumble into dessert bowls and serve.
